If you’re like me, you might be wondering what to do with all those delicious Thanksgiving leftovers. Well, let me share an absolute gem of a recipe that transforms those remnants into something extraordinary: Thanksgiving Leftover Egg Rolls! Trust me; you won’t want to miss out on this mouthwatering way to enjoy your post-Thanksgiving feast.

Ingredients:

  • 1-2 25 Egg Roll Wrappers (adjust based on your leftovers)
  • Leftover Cooked Turkey
  • Leftover Dressing
  • Leftover Candied Yams
  • Leftover Mac and Cheese
  • Cranberry Sauce
  • Leftover Chicken
  • Leftover Ham
  • Leftover Collard Greens
  • Gravy (also for dipping sauce)

Crafting Your Thanksgiving Leftovers Egg Rolls

Prepare the Wrappers: Lay out the egg roll wrappers on a clean, flat surface. Aim for a diamond shape in front of you.

Create the Egg Wash: Crack open an egg into a bowl and scramble it. You may add a little water to the egg for a smoother consistency. This will serve as your egg wash.

Assemble the Fillings: Spread some leftover stuffing and a few small turkey pieces onto the egg roll wrapper. Feel free to add your desired combination of leftovers. However, remember not to overfill the rolls.

Rolling Technique for the Perfect Thanksgiving Egg Rolls: Lift the bottom corner of the wrapper and roll it away from yourself, ensuring the tucked-in corner stays secure while rolling. When halfway up, fold the left and right sides towards the center.

Seal and Fry: Continue rolling until only the final corner remains. Use the egg wash to brush over this corner. Complete the roll, ensuring it’s tightly sealed to prevent unraveling while frying.

Frying the Rolls: Heat approximately 4-5 inches of cooking oil in a pot to 350 degrees Fahrenheit. Carefully place 3 or 4 egg rolls into the hot oil, turning them occasionally. Fry until they turn a golden brown, usually around 2 minutes. Once fried, transfer them to paper towels to drain and cool.

Serve and Enjoy: Serve these freshly fried Thanksgiving leftover egg rolls immediately alongside the delicious gravy for dipping. Dip, savor, and enjoy this delightful twist on your holiday feast!

  1. To start your egg roll, prepare a clean, level surface. Position the wrapper so that it appears as a diamond shape in front of you. Crack open an egg in a bowl and scramble it, you can add a bit of water if you want. (This is your egg wash) 

  2. Next, spread some of the stuffing and a few small turkey pieces. Add in whatever you’d like your combination to be. Just don’t overstuff it.

  3.   Lift the bottom corner and roll away from yourself, ensuring the tucked-in corner remains secure while rolling. When halfway up, fold the left and right sides towards the center.

  4. Continue rolling until only the final corner remains. Use the egg wash from earlier to brush over this corner. Complete the roll, brush a bit more of the egg wash along the seam, and place it seam-side down. Make sure to make these as tight as possible so they don’t open in the fryer.

  5. For frying the egg rolls, pour approximately 4-5 inches of cooking oil into a pot and heat it to 350 degrees Fahrenheit.  Once done, transfer them to paper towels to drain and cool.

  6. Carefully place 3 or 4 egg rolls into the hot oil, turning them occasionally. Fry until they turn a golden brown, which should take about 2 minutes. Once done, transfer them to paper towels to drain and cool. I use a rack on top of a baking sheet.

  7. Serve the freshly fried egg rolls immediately alongside the gravy. Dip and Enjoy!
