  • 1⁄2 cup olive oil
  • Juice for one orange
  • Juice of 2 limes
  • 1⁄2 cup finely chopped onion
  • 1 jalapeño pepper, seeded and minced
  • 2 tablespoons packed brown sugar
  • 1 tablespoon minced garlic
  • 2 teaspoons peeled and grated fresh ginger
  • 2 teaspoons freshly ground black pepper
  • 2 teaspoons dried thyme
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground allspice
  • 1 teaspoon kosher salt
  • 1 teaspoon ground nutmeg
  • 1⁄2 teaspoon ground cinnamon
  • 1⁄2 teaspoon cayenne pepper
  • 4 pounds chicken wings

Step-by-Step Guide:

  • In a large bowl or ziolock bag, combine all ingredients. Mix well to combine.
  • Add the chicken wings to the marinade and toss until evenly coated. Cover the bowl with plastic wrap and refrigerate for at least 2 hours, or overnight for maximum flavor.
  • Preheat your grill to medium-high heat, about 375°F to 400°F.
  • Remove the chicken wings from the marinade and shake off any excess. Discard the remaining marinade.
  • Place the wings on the preheated grill and cook for 15-20 minutes, turning occasionally, until they are golden brown and cooked through. The internal temperature should reach 165°F.
  • Transfer the grilled chicken wings to a serving platter and garnish with chopped scallions, if desired. Serve hot and enjoy the fiery goodness!

Expert Tips and Tricks:

  • For extra heat, add additional cayenne pepper or finely chopped scotch bonnet peppers to the marinade.
  • Make sure to marinate the wings for at least 2 hours to allow the flavors to penetrate the meat fully.
  • For a smokier flavor, use a charcoal grill and add soaked wood chips to the coals before grilling.

  7. Lemon Herb Jerk Chicken Wings: Add lemon zest and fresh herbs like rosemary and parsley to the marinade for a bright and herbaceous flavor.
  8. Maple Bacon Jerk Chicken Wings: Brush the wings with maple syrup and sprinkle with crispy bacon bits before serving for a sweet and savory combination.
