TGI FRIDAY Potato Skins

This recipe brings together the crispy goodness of potato skins, the richness of melted cheese, and the savory crunch of fried bacon.

Ingredients

  • 4 small russet potatoes
  • 1 tablespoon olive oil
  • 1 tablespoon melted butter
  • 1/2 cup sharp cheddar cheese, shredded
  • 1/4 cup mozzarella, shredded
  • 1/2 cup fried bacon, crumbled
  • Salt and pepper to taste

To serve:

  • 1 cup sour cream
  • 1 chopped green onion

Instructions

Preheat your oven to 400°F (200°C).

Scrub the russet potatoes thoroughly and pat them dry. Pierce each potato with a fork a few times.

Rub each potato with olive oil and sprinkle with salt. Place the potatoes directly on the oven rack and bake for about 45-50 minutes or until they are tender.

Once the potatoes are baked and cooled slightly, cut them in half lengthwise. Scoop out the flesh, leaving about 1/4 inch of potato on the skin.

In a bowl, mix the melted butter with salt and pepper. Brush the inside and outside of each potato skin with the butter mixture.

Place the potato skins on a baking sheet and bake for an additional 10-15 minutes or until they become crispy.

Remove the potato skins from the oven and sprinkle each with a combination of sharp cheddar and mozzarella cheese. The combination of these two cheeses brings a perfect balance of sharpness and melt-in-your-mouth goodness.
