Ingredients:

  • 1 pack Bacon
  • Grilled Onions
  • Square Beef Patties (or regular round patties)
  • Burger Sauce:
    • 1/2 cup Mayo
    • 1/4 cup Ketchup
    • 2 tablespoons Mustard
    • 2 tablespoons Sweet Relish
    • Salt and Pepper to taste
    • 1 teaspoon Worcestershire sauce
  • AB’s AP Rub (All-Purpose Rub)
  • AB’s Burger Rub
  • Pretzel Buns
  • Mayonnaise for toasting

Step-by-Step Guide:

  • Prepare the Burger Sauce: In a bowl, mix together mayo, ketchup, mustard, sweet relish, salt, pepper, and Worcestershire sauce until well combined. Set aside.
  • Cook the Bacon and Onions: Heat your griddle to medium-high heat. Lay out the bacon slices on the griddle and cook until crispy. Remove and set aside. Using the bacon grease, cook the sliced onions until caramelized and golden brown. Remove and set aside.
  • Season and Cook the Patties: Season the beef patties generously with AB’s AP Rub and AB’s Burger Rub on both sides. Place the seasoned patties on the hot griddle and cook to your preferred doneness, flipping once halfway through.
  • Toast the Pretzel Buns: Spread a thin layer of mayonnaise on the inside of each pretzel bun. Place the buns on the griddle and toast until golden brown and crispy.
  • Assemble the Baconator: On the bottom half of each toasted pretzel bun, spread a generous amount of the prepared burger sauce. Place a cooked beef patty on top of the sauce. Add a layer of crispy bacon on top of the patty. Top the bacon with a handful of caramelized onions. Place another beef patty on top of the onions. Add another layer of bacon. Finish with the top half of the pretzel bun.

Expert Tips and Tricks:

  • Don’t skimp on the seasoning! Generously coat your patties with AB’s rubs for maximum flavor.
  • If you’re short on time, you can use store-bought burger buns instead of pretzel buns.
  • Experiment with different cheese options like cheddar, American, or pepper jack for added indulgence.

Variations:

  1. Swap out the beef patties for turkey or veggie patties for a lighter option.
  2. Add a slice of tomato and lettuce for a refreshing twist.
  3. Kick up the heat with some sliced jalapenos or a drizzle of hot sauce.
  4. For a smoky flavor, grill the onions alongside the patties.
  5. Try different spreads like barbecue sauce or sriracha mayo for a unique flavor profile.

What to Serve It With:

  1. Crispy fries or sweet potato fries
  2. Onion rings
  3. Coleslaw
  4. Side salad with balsamic vinaigrette
  5. Pickles or pickled vegetables
  6. Corn on the cob
  7. Garlic Parmesan roasted potatoes
  8. Macaroni and cheese
  9. Grilled vegetables
  10. Chips and salsa

Freezing:

  1. If you plan to freeze your Baconators, assemble them completely, including all ingredients except lettuce and tomato if using.
  2. Wrap each assembled Baconator tightly in plastic wrap or aluminum foil to prevent freezer burn.
  3. Place the wrapped Baconators in a single layer on a baking sheet and flash freeze them for about 1 hour.
  4. Once flash frozen, transfer the Baconators to a freezer-safe container or resealable freezer bags.
  5. Label the container or bags with the date and contents, then store in the freezer for up to 3 months.

Reheating:

  1. To reheat frozen Baconators, preheat your oven to 350°F (175°C).
  2. Remove the Baconators from the freezer and unwrap them.
  3. Place the Baconators on a baking sheet lined with parchment paper or aluminum foil.
  4. Bake the Baconators in the preheated oven for 20-25 minutes, or until heated through.
  5. Alternatively, you can reheat the Baconators in a skillet over medium-low heat, flipping occasionally, until warmed through.
  6. Once heated, serve immediately and enjoy your delicious homemade Baconators!
