Peanut Butter Cookies

  • 1 cup unsalted Butter, softened
  • 1 cup Creamy Peanut Butter
  • 1 cup Sugar
  • 1 cup Brown Sugar
  • 2 Eggs
  • 1 teaspoon Vanilla Extract
  • 2 1/2 cups All-Purpose Flour
  • 1 1/2 teaspoon Baking Soda
  • 1/2 teaspoon Salt
  • Additional granulated sugar for rolling (optional)
  1. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper or lightly grease them.

  2. In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until the mixture is light and fluffy.

  3. Mix in the creamy peanut butter until well combined with the butter and sugar mixture.

  4. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract until the batter is smooth.

  5. In a separate bowl, whisk together the all-purpose flour, baking soda, and salt.

  6. Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Be careful not to overmix.

  7. Scoop out tablespoon-sized portions of dough and roll them into balls. If desired, roll the dough balls in additional granulated sugar for a slightly crunchy exterior.

  8. Arrange the cookie dough balls on the prepared baking sheets, leaving enough space between each for spreading.

  9. Using a fork, gently flatten each cookie ball, creating a crisscross pattern on the top.

  10. Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden. Keep in mind that the cookies will continue to firm up as they cool.

  11. Allow the cookies to cool on the baking sheets for a few minutes before transferring them to wire racks to cool completely.

  12. Once cooled, enjoy your delicious homemade peanut butter cookies with a glass of milk or your favorite beverage!
