This is a tender all-white meat chicken breast fillet, marinated in a blend of seasonings, then hand battered and breaded in buttermilk coating. Served with pickles and Classic or Spicy Mayonnaise, served on a warm and toasted buttery brioche bun!

2 tsp Dried Parsley,  2 tsp Italian Seasoning,  2 tsp Salt 1 /1/2 tsp Black Pepper 1 tsp Cayenne Pepper 1 tsp Red Pepper Flakes 1/2 tsp Fennel Seed ( you can use whole or crushed) 1/2 tsp Paprika

Easy Peach Cobbler

  • 4 cans Sliced Peaches 15 oz. cans
  • 1 cup White Sugar
  • 1 cup Brown Sugar
  • 1 tsp Ground Cinnamon
  • 1 tsp Nutmeg
  • 3 tbsp Butter

Seafood Gumbo Ingredients:


2 - 3 lbs. Peeled and Deveined Shrimp (large),  1 - 2 lbs. Anduille Sausage,  1 lb. Lump Crab Meat (optional),  2 lbs. King Crab Legs,  1.5 lbs. Snow Crab Legs,  2 (32 ounce) Chicken Broth,  1/2 cup Vegetable or Canola Oil,  1 cup All Purpose Flour,  1/2 cup Butter (divided),  1 - 2 cups finely chopped Yellow Onion,  1 cup finely chopped Green Pepper,  1 cup finely chopped Celery,  2 tbsp minced Garlic,  1 tbsp Cajun or Creole Seasoning (Creole Kick),  1 tbsp Worcestershire Sauce,  1 12 oz. bottle of Beer,  1 tsp dried Thyme,  3 - 5 Bay Leafs,  1/2 cup Green Onions (tops diced),  1-4 cup fresh Parsley

Chicken Enchiladas Ingredients:


1 tsp Garlic Powder,  1 10 oz. can Diced Tomatoes,  1 15 oz. can Black Beans,  1 small can of Black Olives,  1 Medium Onion , Diced,  12 - 24 Corn Tortillas,  2 cups grated Cheddar Cheese,  2 cups grated Monterey Jack cheese (I used a 4 blend Mexican Style Cheese)

Smoked Brisket Chili Ingredients:


2 tbsp Bacon Grease or 4 slices of bacon cut into 1" pieces,  1 large red onion, chopped,  1 red bell pepper, chopped,  3 cloves of garlic, finely diced,  3 cups leftover smoked beef brisket, cut up into 1-inch cubes,  3 tablespoons chili powder,  1 tablespoon cumin,  ½ tablespoon canned Chipotle in Adobo sauce (or the equivalent in dry Chipotle seasoning, adjust amount to your heat preference),  ½ tablespoon Smoked Paprika,  1 12 oz bottle beer,  1 15 oz can diced Tomatoes,  1 15 oz can Tomato sauce,  1 15 oz can Black beans, drained (optional),  1 15 oz can Kidney beans, drained (optional),  ½ can of a 15 oz can of whole corn, drained (1 cup of grilled corn works good also) (optional),  1 4 oz can diced green chili

  • 2 Links Andouille Sausage I used Hoffy's Chicken Andouille Sausage
  • 2 tsp Blackening Season I used Cajun Black
  • 1 Red Bell Pepper
  • 1 Green Onion Diced
  • 1 cup Smoked Cheese Gouda works best
  • 5 tbsp Butter Separated
  • 4 servings Grits Amount is up to you
  • 1/2 tsp Salt
