- 2 catfish fillets about 8 oz. each
- 2 tablespoons canola oil
- 1 tablespoon unsalted butter
- Blackening Rub
- 1 tablespoon smoked paprika
- 1 tablespoon dark brown sugar
- 2 teaspoons dried oregano
- 1 teaspoon garlic powder
- 1 teaspoon ground cumin
- ½ teaspoon salt
- ¼ teaspoon cayenne pepper
Mix smoked paprika, brown sugar, oregano, garlic powder, cumin, salt, and cayenne in a shallow dish.
Pat fillets dry and coat evenly in spice rub, shaking off excess.
