1andouille sausagesliced in half lengthwise (optional)
1tbspall-purpose flour
1tspkosher salt
½tspcoarse ground black pepper

Instructions
Preheat air fryer to 400°F. Place tater tots in a single layer in the basket. Cook for 10–12 minutes, shaking halfway through, until golden and crispy.
Slice andouille sausage in half lengthwise. Sear cut sides in a hot skillet for 2–3 minutes per side until browned. Remove and set aside.
In the same skillet, cook ground Italian chicken sausage over medium-high heat until browned, 4–5 minutes.
Drain most of the fat. Stir in flour and cook 30 seconds.
Add salt, pepper, cream cheese, and milk. Stir and simmer 3–4 minutes until thick and creamy.
Melt butter in a separate skillet over medium heat.
Whisk eggs in a bowl and pour into the skillet. Stir gently until just set, about 2 minutes. Flip briefly if desired.
Toast the Buns
Toast buns in a skillet with butter until golden brown on the inside.
