Ingredients
  

  • 24 tater tots
  • 8 oz ground Italian chicken sausage
  • 1 andouille sausage sliced in half lengthwise (optional)
  • 1 tbsp all-purpose flour
  • 1 tsp kosher salt
  • ½ tsp coarse ground black pepper
  • ¾ cup whole milk
  • 4 oz cream cheese
  • 4 large eggs
  • 1 tbsp unsalted butter
  • 4 slices American cheese
  • 4 tbsp ketchup
  • 4 large hamburger buns

Instructions
 

  • Preheat air fryer to 400°F. Place tater tots in a single layer in the basket. Cook for 10–12 minutes, shaking halfway through, until golden and crispy.
  • Slice andouille sausage in half lengthwise. Sear cut sides in a hot skillet for 2–3 minutes per side until browned. Remove and set aside.
  • In the same skillet, cook ground Italian chicken sausage over medium-high heat until browned, 4–5 minutes.
  • Drain most of the fat. Stir in flour and cook 30 seconds.
  • Add salt, pepper, cream cheese, and milk. Stir and simmer 3–4 minutes until thick and creamy.
  • Melt butter in a separate skillet over medium heat.
  • Whisk eggs in a bowl and pour into the skillet. Stir gently until just set, about 2 minutes. Flip briefly if desired.
  • Toast the Buns
  • Toast buns in a skillet with butter until golden brown on the inside.
  • Assemble the Sandwiches
  • Layer each sandwich in this order:
  • Bottom bun
  • Optional andouille sausage
  • Scrambled eggs
  • Slice of American cheese
  • Generous spoonful of sausage gravy
  • Air-fried tater tots
  • Ketchup
  • Top bun
