- 1/4 cup unsalted butter
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1/4 cup all-purpose flour
- 3 cup low-sodium chicken or vegetable broth
- 3 cup fresh broccoli florets, chopped
- 2 medium carrots, peeled and diced
- 2 cup milk (whole or 2% recommended)
- 2 cup shredded sharp cheddar cheese
- Salt and pepper to taste
- Optional: 1/2 teaspoon nutmeg (for added warmth)
