Brussels Sprouts with Bacon

Ingredients
  

  • 1 lb Brussels sprouts, trimmed and halved
  • 4 slices of bacon, chopped
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1 tbsp balsamic vinegar (optional, for finishing)

Instructions
 

  • Rinse the Brussels sprouts under cold water and pat them dry with a paper towel. Trim the ends and cut them in half. If the sprouts are large, you can quarter them.
  • Heat a cast iron skillet over medium heat. Add the chopped bacon to the skillet and cook until it becomes crispy. Stir occasionally to ensure even cooking. Once the bacon is crispy, use a slotted spoon to transfer it to a plate lined with paper towels. Leave the bacon drippings in the skillet.
  • In the same skillet with bacon drippings, add olive oil to the pan. Add the halved Brussels sprouts to the skillet, cut side down, to maximize browning. Cook the Brussels sprouts without stirring for 3-4 minutes or until they develop a golden-brown color. Stir and cook for an additional 2-3 minutes.
  • Add minced garlic to the skillet and sauté for about 1 minute until fragrant. Be careful not to burn the garlic.
  • Add the cooked bacon back to the skillet with the Brussels sprouts and toss everything together. This allows the flavors to meld.
  • Season the mixture with salt and pepper to taste. Adjust the seasoning according to your preferences.
  • For an extra layer of flavor, drizzle balsamic vinegar over the Brussels sprouts and bacon mixture. Toss to combine.
  • Transfer the sautéed Brussels sprouts and bacon to a serving dish and serve immediately.
