Ingredients

  • 3 cup all-purpose flour
  • 5 tsp Baking powder
  • 1 1/2 tsp Salt
  • 1/2 tsp baking soda
  • 1/2 cup cold unsalted butter vegetable shortening
  • 1-1 1/4 cup cold buttermilk
  • Melted butter or heavy cream for brushing the tops

Instructions

  • Preheat your grill or smoker to 400°F (204°C).

  • In a large mixing bowl, whisk together the all-purpose flour, baking powder, salt, and baking soda.
  • Cut the cold butter or vegetable shortening into small cubes and add it to the dry ingredients. Use a pastry cutter or your fingers to incorporate the fat into the flour mixture until it resembles coarse crumbs.
  • Make a well in the center of the mixture and pour in the cold buttermilk. Gently stir until the dough comes together. Be careful not to overmix; you want a slightly shaggy dough.
  • Turn the dough out onto a floured surface. Pat it into a rectangle, then fold it over itself. Repeat this process 2-3 times to create layers in the biscuits.
  • Roll or pat the dough to about 1-inch thickness. Using a round biscuit cutter, cut out biscuits and place them on a baking sheet lined with parchment paper.
  • Brush the tops of the biscuits with melted butter or heavy cream.
  • Place the baking sheet on the preheated grill or smoker and bake for 12-15 minutes or until the biscuits are golden brown.
  • Remove the biscuits from the grill/smoker and let them cool slightly before serving.
