Cajun Cabbage

Ingredients

Cajun Spice Mix

  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ¼ tsp cayenne pepper up to a ½ tsp for more heat
  • ½ tsp tsp salt
  • tsp freshly cracked black pepper to taste

Cabbage & Noodles

  • 1 tbsp cooking oil
  • 13 oz smoked sausage, sliced
  • 6 cups shredded cabbage (about ½ of a 2.5-lb head)
  • 1/4 cup water or chicken stock chicken stock for maximum flavor
  • 8 oz wide egg noodles (or preferred noodle)
  • 2 tbsp butter, plus more to taste
  • 2 green onions, sliced
  • Hot sauce, to taste optional

Instructions

  • In a small bowl, combine all Cajun spice mix ingredients and set aside. Finely shred the cabbage.
  • Heat the cooking oil in a large pot over medium heat. Add the sliced sausage and cook, stirring occasionally, until well browned.
  • While the sausage browns, bring a separate pot of water or chicken stock to a boil. Add the egg noodles and cook until tender, then drain and set aside.
  • Add the shredded cabbage, Cajun spice mix, and water or stock to the sausage. Stir well, cover, and cook for 5–7 minutes, stirring occasionally, until the cabbage is wilted.
  • Add the cooked noodles and butter to the pot. Stir until the butter is melted and everything is evenly combined. Taste and adjust seasoning if needed.
  • Remove from heat and let rest for 5 minutes. Garnish with green onions and finish with hot sauce just before serving.

Notes

  1. Letting the sausage get deeply browned before adding the cabbage builds the base flavor of the dish.
  2. For extra richness, use chicken stock instead of water and add an extra tablespoon of butter at the end.
  3. Leftovers reheat best on the stovetop with a small splash of water or stock to loosen the noodles.
