In a small bowl, combine all the Cajun seasoning ingredients: smoked paprika, garlic powder, onion powder, cayenne pepper, dried oregano, dried thyme, salt, black pepper, and celery seed.
Add the Cajun seasoning mix to the gravy, stirring thoroughly to incorporate the flavors. Adjust the seasoning according to your taste preferences.
Allow the gravy to simmer over low heat for about 10-15 minutes, stirring occasionally, until it thickens to your desired consistency.
Taste and adjust the seasoning if necessary. If you prefer a spicier flavor, you can add more Louisiana hot sauce.
Once the gravy reaches the desired thickness, remove it from the heat.
