Cajun Gravy

Ingredients

  • 1/4 cup butter
  • 1/4 cup flour
  • 2 cup chicken broth
  • 1 tsp Louisiana hot sauce
  • 1/2 tsp Worcestershire sauce
  • 3/4 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/4 tsp cayenne pepper
  • 1/4 tsp dried oregano
  • 1/4 tsp dried thyme
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1 celery seed

Instructions

  • In a medium-sized saucepan, melt the butter over medium heat.

  • Once the butter is melted, add the flour and whisk continuously to create a roux. Cook the roux for about 2-3 minutes until it turns golden brown.
  • Gradually add the chicken broth to the roux, whisking constantly to avoid lumps. Continue whisking until the mixture is smooth.
  • Add the Louisiana hot sauce and Worcestershire sauce to the mixture, stirring well
  • In a small bowl, combine all the Cajun seasoning ingredients: smoked paprika, garlic powder, onion powder, cayenne pepper, dried oregano, dried thyme, salt, black pepper, and celery seed.
  • Add the Cajun seasoning mix to the gravy, stirring thoroughly to incorporate the flavors. Adjust the seasoning according to your taste preferences.
  • Allow the gravy to simmer over low heat for about 10-15 minutes, stirring occasionally, until it thickens to your desired consistency.
  • Taste and adjust the seasoning if necessary. If you prefer a spicier flavor, you can add more Louisiana hot sauce.
  • Once the gravy reaches the desired thickness, remove it from the heat.
  • Serve the smoky Cajun gravy over your favorite dishes like grilled meats, mashed potatoes, or rice.
