- 3 bars of cream cheese
- 8 oz sour cream
- 3 large eggs
- Vanilla extract

- Cookies for the crust (Oreo, graham cracker, etc.)
Preheat the oven to 350°F (175°C). Line the bottom of an 8-inch springform pan with parchment paper. Crush cookies for the crust and mix with melted butter. Press the mixture into the bottom of the springform pan and bake for 4 minutes.
Beat cream cheese until smooth, then gradually add sugar. Add vanilla extract and sour cream, mixing until smooth. Add eggs one at a time, mixing well after each addition. Set aside a portion of the batter and mix caramel sauce into the rest.
Melt sugar in a saucepan, then slowly add heavy whipping cream. Remove from heat and let cool slightly.
Pour plain cheesecake batter onto the pre-baked crust. Gently pour caramel cheesecake batter on top and swirl together. Place the springform pan in a larger pan with hot water and bake.
Melt butter in a saucepan, then add flour, brown sugar, cinnamon, and salt. Stir until crumbly, then set aside to cool.
Once cooled, remove cheesecake from springform pan and drizzle with caramel sauce. Sprinkle cinnamon crumble over the top and serve with whipped cream if desired.
