For the Sausage Gravy: - 16 ounces ground sausage - ⅓ cup all-purpose flour - 3 cups whole milk - ½ teaspoon black pepper - ¼ teaspoon salt - ¼ teaspoon dried thyme For the Biscuits: - 6 slices bacon diced - 4 cups all-purpose flour - 1 cup shredded extra-sharp cheddar cheese - ¼ cup chopped fresh parsley leaves - 4 teaspoons baking powder - 2 teaspoons freshly ground black pepper - 1 ½ teaspoons kosher salt - 1 teaspoon baking soda - 1 teaspoon garlic powder - ¾ cup unsalted butter frozen - 1 ¾ cups buttermilk
In a sauté pan over medium heat, cook ground sausage until browned. Sprinkle in flour, stir, and cook for 1-2 minutes.
Slowly whisk in the milk, then add pepper, salt, and thyme. Simmer until thickened (about 3–4 minutes). Set aside.
In a skillet, cook bacon until crispy. Drain and cool.
In a large bowl, mix flour, cheese, parsley, baking powder, pepper, salt, baking soda, and garlic powder.
Grate frozen butter into the dry mix, then stir in buttermilk and bacon until just combined.
Turn dough onto a floured surface, knead briefly, and roll to 1¼-inch thickness. Cut biscuits with a biscuit cutter.
Place on a baking sheet and freeze for 15 minutes.
Bake at 450°F for 14–17 minutes or until golden brown.
Serve biscuits topped with warm sausage gravy.
