Ingredients
  

  • For the Sausage Gravy:
  • - 16 ounces ground sausage
  • - ⅓ cup all-purpose flour
  • - 3 cups whole milk
  • - ½ teaspoon black pepper
  • - ¼ teaspoon salt
  • - ¼ teaspoon dried thyme
  • For the Biscuits:
  • - 6 slices bacon diced
  • - 4 cups all-purpose flour
  • - 1 cup shredded extra-sharp cheddar cheese
  • - ¼ cup chopped fresh parsley leaves
  • - 4 teaspoons baking powder
  • - 2 teaspoons freshly ground black pepper
  • - 1 ½ teaspoons kosher salt
  • - 1 teaspoon baking soda
  • - 1 teaspoon garlic powder
  • - ¾ cup unsalted butter frozen
  • - 1 ¾ cups buttermilk

Instructions
 

  • In a sauté pan over medium heat, cook ground sausage until browned. Sprinkle in flour, stir, and cook for 1-2 minutes.
  • Slowly whisk in the milk, then add pepper, salt, and thyme. Simmer until thickened (about 3–4 minutes). Set aside.
  • In a skillet, cook bacon until crispy. Drain and cool.
  • In a large bowl, mix flour, cheese, parsley, baking powder, pepper, salt, baking soda, and garlic powder.
  • Grate frozen butter into the dry mix, then stir in buttermilk and bacon until just combined.
  • Turn dough onto a floured surface, knead briefly, and roll to 1¼-inch thickness. Cut biscuits with a biscuit cutter.
  • Place on a baking sheet and freeze for 15 minutes.
  • Bake at 450°F for 14–17 minutes or until golden brown.
  • Serve biscuits topped with warm sausage gravy.
