- 1/2 cup Greek yogurt
- Juice and zest of 1 lime
- 2 tbsp extra virgin olive oil
- 1/4 cup water
- 1/2 avocado
- 3/4 cup fresh cilantro
- 1 clove garlic
- 1/4 cup green onion
- 1 tsp kosher salt
If you have a grill, preheat it to medium-high heat.
Cut the avocado in half and remove the pit.
Grill the avocado halves on the preheated grill for about 2-3 minutes on each side until grill marks appear. Remove and let them cool.
In a blender or food processor, combine Greek yogurt, lime juice, lime zest, extra virgin olive oil, water, grilled avocado, fresh cilantro, garlic clove, and green onion.
Blend until smooth and creamy.
If the sauce is too thick, you can add more water until you reach your desired consistency.
Taste the sauce and adjust the salt and other seasonings if needed.
