Crispy Bacon & Honey Roasted Potatoes

- 2 lbs baby potatoes, halved
- 6 slices bacon chopped
- 3 tbsp olive oil
- 2 tbsp honey
- 1 tsp garlic powder
- ½ tsp smoked paprika
- Salt and black pepper to taste
- Fresh parsley chopped (for garnish)
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
Wash, dry, and halve the potatoes. Chop bacon into small pieces.
In a large bowl, combine potatoes, olive oil, garlic powder, smoked paprika, salt, and pepper. Toss well.
Spread potatoes on the baking sheet and top with bacon.
Roast 30–35 minutes, flipping halfway through.
Drizzle with honey in the last 5 minutes and return to the oven until caramelized and golden.
Garnish with parsley and serve immediately.
