Ingredients

  • 1 lb chicken breast
  • 1 cup long-grain white rice
  • 1 can 10.5 oz cream of chicken soup
  • 2 cups chicken broth
  • 1 cup frozen mixed vegetables
  • 2 pinches salt
  • 1 teaspoon black pepper
  • 1 tablespoon Level Up A Rub

Instructions

  • Place the chicken breast in the bottom of your crockpot.
  • In a medium bowl, mix together the rice, cream of chicken soup, chicken broth, frozen vegetables, salt, pepper, and Level Up A Rub.
  • Pour the mixture over the chicken in the crockpot.
  • Cover and cook on low for 4 to 6 hours, or until the chicken is cooked through and the rice is tender.
  • Fluff the rice with a fork. Slice or shred the chicken and serve warm.

Notes

Use long-grain white rice for best results. Instant rice will become too soft.
You can substitute chicken thighs for extra flavor and tenderness.
Stir in shredded cheddar at the end for a cheesy twist.
