Loaded Cream Cheese Dip

Ingredients

  • 1 8-oz block cream cheese, softened
  • cups shredded medium cheddar cheese
  • ½ cup shredded Monterey Jack or Pepper Jack cheese
  • ½ cup mayonnaise
  • ¼ –½ teaspoon chipotle powder or chili powder
  • 3 –4 tablespoons fire-roasted green chilies drained
  • 7 Ritz crackers crushed
  • 6 slices thick-cut bacon cooked and crumbled
  • 1 –2 green onions chopped

Instructions

  • Preheat the oven to 350°F. In a medium bowl, mix the cream cheese, mayonnaise, shredded cheeses, and chipotle powder until smooth. Fold in the fire-roasted green chilies, then spread the mixture evenly into a small baking dish. Sprinkle crushed Ritz crackers over the top and bake for 15 minutes until heated through and melty.
  • Remove from the oven and immediately top with crumbled bacon and green onions. Serve warm with crackers.

  • Best served immediately while warm
  • Reheat gently to maintain a creamy texture
