- 1 8-oz block cream cheese, softened
- 1½ cups shredded medium cheddar cheese
- ½ cup shredded Monterey Jack or Pepper Jack cheese
- ½ cup mayonnaise
- ¼ –½ teaspoon chipotle powder or chili powder
- 3 –4 tablespoons fire-roasted green chilies drained
- 7 Ritz crackers crushed
- 6 slices thick-cut bacon cooked and crumbled
- 1 –2 green onions chopped
Preheat the oven to 350°F. In a medium bowl, mix the cream cheese, mayonnaise, shredded cheeses, and chipotle powder until smooth. Fold in the fire-roasted green chilies, then spread the mixture evenly into a small baking dish. Sprinkle crushed Ritz crackers over the top and bake for 15 minutes until heated through and melty.
Remove from the oven and immediately top with crumbled bacon and green onions. Serve warm with crackers.
