Loaded Potato Soup

Ingredients

  • 2 tbsp olive oil
  • 5 –6 slices bacon diced
  • 1 medium onion finely diced
  • 3 –4 cloves garlic minced
  • 2 tsp kosher salt
  • Black pepper to taste
  • 5 –6 small yellow potatoes diced
  • 32 oz vegetable broth
  • 1 cup heavy cream or milk
  • ½ cup Greek yogurt or sour cream
  • 1 cup shredded cheddar cheese

Instructions

  • Heat olive oil in a large Dutch oven over medium-high heat and cook diced bacon until crispy. Add onion and garlic, cooking until softened and fragrant. Season with salt and pepper.
  • Add potatoes and broth, cover, and simmer until potatoes are fork-tender. Lightly mash some of the potatoes, then stir in cream, yogurt, and cheese. Simmer gently until smooth and creamy. Serve hot with desired toppings.

Notes

  • Mash only part of the potatoes for best texture
  • Reheat gently to prevent dairy separation
  • Add broth when reheating if soup thickens
