- 1 lb shrimp peeled and deveined
- 8 oz pasta fettuccine, linguine, or spaghetti
- 2 tbsp olive oil
- 4 cloves garlic minced
- ½ cup sun-dried tomatoes
- ½ cup chicken broth
- ¾ cup heavy cream
- ½ cup grated Parmesan cheese
- 1 tsp Italian seasoning
- ½ tsp red pepper flakes
- Salt and black pepper to taste
- Zest and juice of ½ lemon
Cook the pasta in salted water until al dente, reserving pasta water before draining. Season shrimp and sear quickly in olive oil over medium-high heat, then remove from the skillet.
In the same pan, sauté garlic and sun-dried tomatoes until fragrant. Deglaze with chicken broth, then stir in heavy cream and simmer gently until slightly thickened. Add Parmesan, red pepper flakes, lemon zest, and juice, stirring until smooth. Toss pasta and shrimp into the sauce, adding pasta water as needed. Serve hot.
