Ingredients

  • 1 lb frozen sliced or diced peaches
  • 1/3 cup sugar
  • 1/2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 cup salted butter
  • 1 tsp vanilla extract
  • 1/2 tsp cornstarch
  • 10-12 egg roll wrappers
  • Oil for frying
  • 1/4 cup sugar
  • 1 tsp ground cinnamon

Instructions

  • In a medium-sized pot, add the frozen peaches, sugar, ground cinnamon, ground nutmeg, salted butter, vanilla extract, and cornstarch.
  • Place the pot over medium-low heat and cook for about 10 minutes. Stir occasionally until the peaches are thawed and the mixture thickens into a light syrup. Set aside to cool slightly.
  • Lay out your egg roll wrappers on a clean, dry surface. Have a small bowl of water nearby to help seal the edges of the wrappers.
  • Place about 2-3 slices of peaches and a spoonful of the syrupy filling in the center of each wrapper.
  • Fold the bottom corner of the wrapper up over the filling, then fold in the sides, and roll up tightly. Use a dab of water to seal the edges.
  • Heat your frying oil in a deep pan or fryer to 350°F (175°C).
  • Carefully add the egg rolls to the hot oil, a few at a time. Fry until golden brown, about 3-4 minutes. If you're doing a shallow fry, flip the egg rolls halfway through to ensure even cooking.
  • Remove the egg rolls from the oil and place them on a cooling rack or a plate lined with paper towels to drain any excess oil.
  • While the egg rolls are still warm, sprinkle them generously with the cinnamon sugar mixture.
  • For an extra indulgent treat, serve your Peach Cobbler Egg Rolls with a scoop of vanilla ice cream and a drizzle of caramel syrup.
