Peanut Butter Cookies

Ingredients
  

  • 1 cup unsalted Butter, softened
  • 1 cup Creamy Peanut Butter
  • 1 cup Sugar
  • 1 cup Brown Sugar
  • 2 Eggs
  • 1 tsp Vanilla Extract
  • 2 1/2 cup All-Purpose Flour
  • 1 1/2 tsp Baking Soda
  • 1/2 tsp Salt
  • Additional granulated sugar for rolling (optional)

Instructions
 

  • Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper or lightly grease them.
  • In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until the mixture is light and fluffy.
  • Mix in the creamy peanut butter until well combined with the butter and sugar mixture.
  • Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract until the batter is smooth.
  • In a separate bowl, whisk together the all-purpose flour, baking soda, and salt.
  • Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Be careful not to overmix.

  • Scoop out tablespoon-sized portions of dough and roll them into balls. If desired, roll the dough balls in additional granulated sugar for a slightly crunchy exterior.
  • Arrange the cookie dough balls on the prepared baking sheets, leaving enough space between each for spreading.
  • Using a fork, gently flatten each cookie ball, creating a crisscross pattern on the top.
  • Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden. Keep in mind that the cookies will continue to firm up as they cool.
  • Allow the cookies to cool on the baking sheets for a few minutes before transferring them to wire racks to cool completely.
  • Once cooled, enjoy your delicious homemade peanut butter cookies with a glass of milk or your favorite beverage!
