- 2 lbs Italian sausage
- 1 lb andouille sausage
- 4 medium potatoes, diced
- 1 large onion, diced
- 2 bell peppers (any color), diced
- 8 large eggs
- 2 cups shredded cheddar cheese (or preferred cheese blend)
- 2 tbsp olive oil
- Salt, to taste
- Black pepper, to taste
- Fresh parsley, chopped (optional, for garnish)
Heat a large skillet over medium heat. Add the Italian sausage and cook until browned and fully cooked through, breaking it apart as it cooks. Remove from the skillet and set aside. In the same skillet, add the sliced andouille sausage and cook for 3–4 minutes until lightly browned. Remove and set aside with the Italian sausage.
Add olive oil to the skillet. Add the diced potatoes in an even layer and cook over medium heat for 10–15 minutes, stirring occasionally, until golden brown and tender. Season with salt and pepper.
Add the diced onion and bell peppers to the skillet with the potatoes. Cook for 5–7 minutes until softened and fragrant.
Return both sausages to the skillet and stir to combine with the potatoes and vegetables.
Crack the eggs directly over the skillet mixture or whisk them first in a bowl for a scrambled-style texture. Cover the skillet and cook until the eggs reach your desired doneness.
Sprinkle shredded cheese evenly over the top. Cover again for 2–3 minutes until the cheese is melted and bubbly.
Remove from heat, garnish with chopped parsley if desired, and serve hot.
