Rustic Garlic & Herb Red Potato Mash

A hearty, skin-on mashed potato full of garlic, herbs, and buttery flavor — the perfect rustic side for Thanksgiving or any comfort meal.

Ingredients

  • 2 lb red potatoes skins on, quartered
  • 4 tbsp unsalted butter
  • ½ cup sour cream
  • 3 garlic cloves minced
  • 1 tbsp fresh parsley chopped
  • 1 tsp thyme
  • Salt and black pepper to taste

Instructions

  • Place red potatoes in salted water and boil until fork tender, about 15 minutes. Drain well.
  • Melt butter in a small pan with garlic, parsley, and thyme until fragrant.
  • Mash potatoes by hand, leaving some texture.
  • Stir in garlic butter and sour cream until creamy. Season with salt and pepper.
  • Transfer to a bowl and top with fresh herbs and a drizzle of melted butter.
