- 2 lb red potatoes skins on, quartered
- 4 tbsp unsalted butter
- ½ cup sour cream
- 3 garlic cloves minced
- 1 tbsp fresh parsley chopped
- 1 tsp thyme
- Salt and black pepper to taste
Place red potatoes in salted water and boil until fork tender, about 15 minutes. Drain well.
Melt butter in a small pan with garlic, parsley, and thyme until fragrant.
Mash potatoes by hand, leaving some texture.
Stir in garlic butter and sour cream until creamy. Season with salt and pepper.
Transfer to a bowl and top with fresh herbs and a drizzle of melted butter.
