Servings: 4
- 1 lb uncooked shrimp, peeled and deveined
- 1 tbsp olive oil
- 6 tbsp unsalted butter
- 1 1/4 cups white cooking wine (or chicken broth for a non-alcoholic option
- 4 tsp minced garlic
- Juice of ½ lemon
- 1 tsp Italian seasoning
- Salt, to taste
- Black pepper, to taste
- Grated Parmesan cheese, for garnish
- Fresh parsley, chopped (optional, for garnish)
Heat olive oil in a large skillet over medium-high heat. Add shrimp in a single layer and cook for 2–3 minutes per side, until pink and opaque. Remove from the skillet and set aside.
Reduce heat to medium. Add butter to the same skillet and allow it to melt completely. Stir in minced garlic and sauté for about 30 seconds until fragrant, being careful not to burn it.
Pour in the white cooking wine (or chicken broth). Scrape the bottom of the pan to release any flavorful browned bits. Let the sauce simmer for 4–5 minutes, or until reduced by about half.
Stir in lemon juice, Italian seasoning, salt, and black pepper. Mix well to combine all the flavors.
Add the cooked shrimp back to the skillet and toss to coat in the sauce. Cook for an additional 1–2 minutes to allow the shrimp to absorb the flavors.
Remove from heat and garnish with grated Parmesan cheese and fresh parsley. Serve immediately with crusty bread, pasta, or rice.
-
Don’t overcook the shrimp: They cook quickly and can become rubbery if left on heat too long.
-
Let the sauce reduce: Reducing the wine concentrates flavor and creates a rich, silky texture.
-
Serving idea: Spoon the extra garlic butter sauce over pasta or serve with warm bread to soak up every drop.
