- 2 lb Yukon Gold potatoes peeled & chunked
- ½ cup unsalted butter 1 stick
- ¾ cup heavy cream warmed
- Salt and white pepper to taste
Boil Yukon Gold potatoes in salted water until tender (15–20 minutes). Drain well.
Use a ricer or masher for a smooth texture.
Warm butter and heavy cream together. Gradually fold into potatoes until creamy and glossy.
Add salt and white pepper to taste.
Garnish with a pat of butter and a sprinkle of chives.
