Ingredients

  • 2 lb Yukon Gold potatoes peeled & chunked
  • ½ cup unsalted butter 1 stick
  • ¾ cup heavy cream warmed
  • Salt and white pepper to taste

Instructions

  • Boil Yukon Gold potatoes in salted water until tender (15–20 minutes). Drain well.
  • Use a ricer or masher for a smooth texture.
  • Warm butter and heavy cream together. Gradually fold into potatoes until creamy and glossy.
  • Add salt and white pepper to taste.
  • Garnish with a pat of butter and a sprinkle of chives.
