In a medium-high heat pan, brown 2 pounds of ground beef until fully cooked. Drain excess grease.
Add diced onions and optional diced green bell pepper to the beef. Stir and cook until onions are translucent. Season with steak seasoning. Taste and adjust if needed.
Add tomato sauce, red wine vinegar, Worcestershire sauce, and brown sugar. Stir and let it simmer on low for 10-12 minutes.
Add 2 cups of shredded Colby Jack cheese and cubed cream cheese. Stir until the cheeses are fully melted and incorporated.
Preheat your broiler. Sprinkle the remaining 1 cup of shredded Colby Jack cheese over the top. Place the pan under the broiler for 5-6 minutes or until the cheese is melted and slightly browned. Take it out of the oven, let it cool for a minute, and serve with toasted baguette slices or tortilla scoops.
