Smothered Okra with Shrimp

Ingredients

  • 1 lb fresh okra sliced
  • 2 lbs colossal raw shrimp peeled and deveined
  • 5 vine or Roma tomatoes chopped
  • ½ cup chopped onions
  • 1 tbsp garlic paste
  • 2 tbsp olive oil
  • 2 tbsp tomato paste
  • 2 tbsp Cajun seasoning
  • 2 cups water or broth
  • 1 tsp kosher salt
  • ½ tsp coarse black pepper
  • 1 tsp ground ginger
  • 1 tsp cumin
  • 1 tsp dried basil
  • 1 tsp dried parsley
  • 1 tsp red pepper flakes optional
  • 3 bay leaves

Instructions

  • Heat olive oil in a large saucepan over medium-high heat. Season shrimp with salt and pepper and cook briefly until pink, then remove and set aside.
  • Add okra and onions to the same pan, cover, and cook until softened. Stir in tomatoes, tomato paste, seasonings, garlic, water or broth, and bay leaves. Reduce heat and smother until tender. Add shrimp back at the end and cook until heated through. Serve hot over rice.

Notes

  • Add shrimp at the end to keep them tender
  • Use broth for richer flavor
  • Adjust spice level to taste
