Southern Buttermilk Drop Biscuits

Ingredients
  

  • 2 cup all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp granulated sugar
  • 3/4 tsp kosher salt
  • 1 cup cold buttermilk
  • 1/2 cup unsalted butter melted and cooled slightly
  • 1/2 cup sharp cheddar cheese shredded
  • 1/4 cup green onions finely chopped
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp black pepper
  • Cooking spray or extra melted butter for greasing

Instructions
 

  • Preheat your grill or smoker to medium heat. >brbr<
  • In a large mixing bowl, whisk together the all-purpose flour, baking powder, baking soda, sugar, and kosher salt.
  • In a separate bowl, combine the cold buttermilk and melted butter.
  • Pour the wet ingredients into the dry ingredients and gently mix until just combined.
  • Fold in the shredded cheddar cheese, chopped green onions, smoked paprika, garlic powder, onion powder, and black pepper. Mix until evenly distributed throughout the dough.
  • Use a spoon or cookie scoop to drop portions of the dough onto a baking sheet or cast-iron skillet coated with cooking spray or brushed with melted butter.
  • Place the baking sheet or skillet on the preheated grill or smoker. Close the lid and bake for 12-15 minutes or until the biscuits are golden brown and cooked through.
  • Remove from the grill or smoker and let them cool slightly.
  • Serve the smoky buttermilk drop biscuits with butter, jam, honey, or any of your favorite toppings.
