Southern Fried Catfish
- 5 Catfish Fillets
- 2 cup Corn Meal
- 2 cup All-Purpose Flour
- 2 tbsp Yellow Mustard
- 2 Eggs beaten
- 2 tbsp Creole Seasoning Creole Kick
- 1/2 cup Hot Sauce Franks Red Hot Sauce
- 1 tbsp Paprika
- 1 tbsp Black Pepper
- 1 tbsp Garlic Powder
- 1 tbsp Onion Powder
- 1 tsp Cayenne Pepper Optional
Hush Puppies
- 1 1/2 cup Corn Meal
- 1 1/2 cup All-Purpose Flour
- 2 tbsp Sugar
- 2 tbsp Baking Powder
- 2 tsp Cayenne Pepper
- 1 tbsp Baking Soda
- 1 1/4 cup Buttermilk
- 2 Eggs
- 1 tbsp Jalapenos Finely chopped
- 1 Onion Finely chopped
Mix together Corn Meal, All-Purpose Flour, Creole Seasoning, Paprika, Black Pepper, Garlic Powder, Onion Powder, and Cayenne Pepper (if using) in a bowl.

In another bowl, beat the Eggs and mix in Yellow Mustard and Hot Sauce.
Dip each Catfish fillet into the wet mixture, then coat it thoroughly with the dry mixture.
Heat your deep fryer or a large pan with oil to 350°F (175°C).
Fry the catfish until golden brown, ensuring it's cooked through. Drain on paper towels.
Hush Puppies
In a bowl, mix Corn Meal, All-Purpose Flour, Sugar, Baking Powder, Cayenne Pepper, and Baking Soda.
In a separate bowl, whisk together Buttermilk and Eggs.
Combine the wet and dry ingredients, then fold in Jalapenos and Onions.
Heat oil to 375°F (190°C) in a deep fryer or a pan.
Drop spoonfuls of batter into the hot oil and fry until golden brown.
Drain on paper towels.
