Ingredients
  

Southern Fried Catfish

  • 5 Catfish Fillets
  • 2 cup Corn Meal
  • 2 cup All-Purpose Flour
  • 2 tbsp Yellow Mustard
  • 2 Eggs beaten
  • 2 tbsp Creole Seasoning Creole Kick
  • 1/2 cup Hot Sauce Franks Red Hot Sauce
  • 1 tbsp Paprika
  • 1 tbsp Black Pepper
  • 1 tbsp Garlic Powder
  • 1 tbsp Onion Powder
  • 1 tsp Cayenne Pepper Optional

Hush Puppies

  • 1 1/2 cup Corn Meal
  • 1 1/2 cup All-Purpose Flour
  • 2 tbsp Sugar
  • 2 tbsp Baking Powder
  • 2 tsp Cayenne Pepper
  • 1 tbsp Baking Soda
  • 1 1/4 cup Buttermilk
  • 2 Eggs
  • 1 tbsp Jalapenos Finely chopped
  • 1 Onion Finely chopped

Instructions
 

  • Mix together Corn Meal, All-Purpose Flour, Creole Seasoning, Paprika, Black Pepper, Garlic Powder, Onion Powder, and Cayenne Pepper (if using) in a bowl. >br
  • In another bowl, beat the Eggs and mix in Yellow Mustard and Hot Sauce.
  • Dip each Catfish fillet into the wet mixture, then coat it thoroughly with the dry mixture.
  • Heat your deep fryer or a large pan with oil to 350°F (175°C).
  • Fry the catfish until golden brown, ensuring it's cooked through. Drain on paper towels.

Hush Puppies

  • In a bowl, mix Corn Meal, All-Purpose Flour, Sugar, Baking Powder, Cayenne Pepper, and Baking Soda.
  • In a separate bowl, whisk together Buttermilk and Eggs.
  • Combine the wet and dry ingredients, then fold in Jalapenos and Onions.
  • Heat oil to 375°F (190°C) in a deep fryer or a pan.
  • Drop spoonfuls of batter into the hot oil and fry until golden brown.
  • Drain on paper towels.
