- 3 pound potatoes, sliced thin
- 1 yellow onion, sliced thin
- 1 red bell pepper, sliced thin
- 2 to 3 tablespoons avocado oil, divided
- 1 teaspoon garlic powder (optional)
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 teaspoon bacon sea salt
Start by washing and slicing your potatoes thinly. Do the same with your yellow onion and red bell pepper. Thin slices will ensure everything cooks evenly and quickly.
In a large heavy-bottomed skillet, like a cast iron skillet, add 1 tablespoon of avocado oil and heat over medium heat.
Add the sliced onion and red bell pepper to the skillet. Sauté them until they are caramelized, which should take about 10 minutes. Stir occasionally to prevent burning and ensure even cooking.
Add another tablespoon of avocado oil to the skillet. Then, add the sliced potatoes. Let them sit on the bottom of the skillet for about 5 minutes without stirring. This helps them get a nice, crispy texture.
Using a spatula, flip the potatoes often to help them brown evenly. Continue doing this until the potatoes are fully cooked, about 20 minutes in total. If needed, add the remaining tablespoon of oil to prevent sticking and ensure a good crisp.
When the potatoes are almost done, season with garlic powder (if using), salt, pepper, and bacon sea salt. Stir well to distribute the seasonings evenly.
