- 4 ears corn husked
- 2 tablespoons olive oil
- Salt and black pepper to taste
- 4 tablespoons mayonnaise
- ⅓ cup sour cream or Mexican crema
- 1½ teaspoons Cajun seasoning
- 1½ teaspoons smoked paprika
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- ½ cup crumbled feta or cotija cheese
- 1 tablespoon fresh cilantro chopped
- 1 tablespoon fresh lime juice
- 1 teaspoon chipotle powder or chili powder optional
Preheat the grill to medium-high heat. Brush the corn with olive oil and season evenly with salt and black pepper. Grill the corn directly on the grates, turning occasionally, until tender and lightly charred.
In a bowl, whisk together the mayonnaise, sour cream, Cajun seasoning, smoked paprika, onion powder, and garlic powder until smooth. Brush the sauce generously over the hot grilled corn, then top with cheese, cilantro, lime juice, and optional chili powder. Serve immediately.
