Stuffed French Toast

Ingredients
  

  • Thick slices of Brioche, Challah, or French Bread
  • 8 oz Cream Cheese (1 pkg), softened
  • 1/4 cup Sour Cream
  • 3/4 cup Powdered Sugar, plus more for topping
  • 2 tsp Vanilla Extract, divided
  • 1 cup Strawberries, Fresh or Frozen, sliced super thin
  • 1/4 cup Granulated Sugar
  • 3 Eggs
  • 1 1/2 cup Milk
  • 1 tsp Ground Cinnamon
  • Maple syrup for topping (optional)
  • 8 Bacon slices

Instructions
 

  • Wash and clean the strawberries. Cut the tops off and slice them in half. Sprinkle granulated sugar over the strawberries to create a syrup. Cover with Saran Wrap and refrigerate for about an hour.
  • In a mixing bowl, combine softened cream cheese, sour cream, powdered sugar, and 1 teaspoon of vanilla extract. Mix on low speed to avoid powdered sugar mess. Gradually increase speed until well combined. Set aside.
  • Cook bacon and strain the fat to remove impurities.
  • In a shallow dish, whisk together eggs, milk, and ground cinnamon.
  • Cut thick slices of Brioche, Challah, or French Bread.

  • Heat a pan and add butter. Dip each slice of bread in the egg mixture, making sure it's well-coated. Cook each side until golden brown.
  • Take a slice of cooked bread, spread a layer of the cream cheese mixture. Add a little bacon and some of the macerated strawberries. Top with another slice of bread to create a sandwich.
  • Optional: Drizzle with maple syrup and sprinkle with powdered sugar. Serve and enjoy your delicious Stuffed French Toast!
