Sweet Chili Glazed Meatloaf

Ingredients

  • tbsp unsalted butter or vegetable oil
  • ½ cup red bell pepper, diced
  • ½ cup green bell pepper, diced
  • 1 cup yellow onion, diced
  • 1 tbsp minced garlic
  • 1 cup Ritz crackers, crushed
  • ¾ cup Milk
  • 2 lbs. ground beef (80–85% lean)
  • 2 large eggs
  • 1 tbsp Worcestershire sauce
  • 1 tbsp Dijon mustard
  • 2 tbsp onion powder
  • 2 tbsp garlic powder
  • tsp dried thyme
  • tsp dried basil
  • 1 tbsp dried parsley
  • 1 tsp paprika
  • 1 tbsp salt
  • tsp black pepper

Sweet Chili Glaze

  • ¾ cup ketchup
  • ¾ cup sweet chili sauce
  • ¼ cup brown sugar

Instructions

  • Preheat oven to 375°F (190°C). Line a baking sheet with heavy-duty foil.
  • Heat butter or oil over medium heat. Add bell peppers and onions and cook 5–7 minutes until soft. Add garlic during the last 30 seconds. Remove from heat and cool slightly.
  • Mix crushed Ritz crackers with milk and let soak 5 minutes. In another bowl, stir together ketchup, sweet chili sauce, and brown sugar. Set aside half.
  • In a large bowl, combine ground beef, soaked crackers, veggies, eggs, Worcestershire, Dijon, spices, salt, and pepper. Mix gently—do not overwork. Shape into a loaf on the pan.
  • Spread half the glaze on top. Loosely tent with foil and bake 30 minutes. Remove foil, add remaining glaze, and bake uncovered another 30 minutes until internal temp reaches 165°F.
  • Rest 10 minutes before slicing to keep juices inside.

Notes

Let vegetables cool before mixing to protect texture
Use a thermometer—overcooking dries meatloaf fast
Adjust glaze sweetness or heat before baking if needed
