Ingredients

  • 6 tablespoon unsalted butter, divided
  • 4 cup russet potatoes, peeled and diced into 1/2-inch cubes
  • 1 small sweet onion, finely diced
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 4 cup cooked corned beef, chopped or shredded (or canned corned beef, if preferred)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder

Optional (if using fresh corned beef):

  • Beef stock for boiling the brisket

Instructions

  • Heat a large skillet over medium heat and add 4 tablespoons of butter. Once the butter has melted, toss in the diced onion. Cook for 3-4 minutes until the onions soften and become translucent. Add the chopped corned beef and sauté for an additional 3-5 minutes to let the flavors meld together.
  • While the onions and corned beef cook, peel and dice the russet potatoes into 1/2-inch cubes. Boil the potatoes in a pot of water until they’re fork-tender, about 5-10 minutes. Drain the potatoes well to remove any excess water.
  • Add the boiled potatoes to the skillet with the onions and corned beef. Stir to combine. Season the mixture with kosher salt, black pepper, garlic powder, and onion powder. Toss everything together to ensure even seasoning.
  • Using the back of a spatula, press the mixture into an even layer in the skillet. Let it cook undisturbed for 3-5 minutes to develop a golden-brown crust.
  • Scrape the bottom of the skillet to flip the hash, bringing the crispy bits to the top. Add the remaining 2 tablespoons of butter and mix it in. Press the hash down again and let it cook for another 3-5 minutes. Repeat this process 2-3 times until you achieve your desired level of browning and crispiness.
