Turkey Meatloaf

Ingredients
  

For the Glaze:

  • 2/3 cup ketchup
  • 1/3 cup dark brown sugar, packed
  • 1 1/2 tbsp apple cider vinegar
  • 1/2 tsp Dijon mustard

For the Meatloaf:

  • 1 tbsp olive oil
  • 1 medium yellow onion, minced
  • 3 cloves garlic, minced
  • 1 1/4 tsp salt
  • 3/4 tsp freshly ground black pepper
  • 2 tsp paprika
  • 1 tsp dried thyme
  • 1 1/2 tbsp Worcestershire sauce
  • 1 1/2 tbsp Dijon mustard
  • 2 large eggs
  • 2 lb ground turkey (93/7)
  • 3/4 cup Italian seasoned breadcrumbs
  • A few springs chopped fresh parsley, for garnish (optional)

Instructions
 

  • Preheat your oven to 375°F (190°C).
  • In a small saucepan, combine ketchup, dark brown sugar, apple cider vinegar, and Dijon mustard. Cook over medium heat, stirring occasionally, until the sugar has dissolved and the mixture has slightly thickened, about 5 minutes. Set aside.
  • Heat olive oil in a skillet over medium heat. Add minced onion and garlic, and sauté until softened and fragrant, about 5 minutes. Remove from heat and let cool slightly.
    In a large mixing bowl, combine the cooked onion and garlic mixture with salt, black pepper, paprika, dried thyme, Worcestershire sauce, Dijon mustard, and eggs. Mix until well combined. Add the ground turkey and Italian seasoned breadcrumbs to the bowl, and gently mix until all ingredients are evenly incorporated.
  • Transfer the turkey mixture to a greased or parchment-lined loaf pan, shaping it into a loaf shape.
  • Spoon a portion of the prepared glaze over the top of the meatloaf, spreading it evenly. Place the loaf pan in the preheated oven and bake for about 45-55 minutes, or until the meatloaf is cooked through and the internal temperature reaches 165°F (74°C). During the last 10-15 minutes of baking, you can apply an additional layer of the glaze on top of the meatloaf for extra flavor.
  • Once cooked, remove the meatloaf from the oven and let it rest for a few minutes before slicing. Garnish with chopped fresh parsley, if desired, before serving.
