White Chicken Chili

Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion diced
  • 4 cloves garlic minced
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • ½ teaspoon smoked paprika
  • ½ teaspoon chili powder
  • 1 4 oz can diced green chiles
  • 2 cans 15 oz each white beans, drained and rinsed
  • 3 cups shredded cooked chicken rotisserie chicken works great
  • 4 cups chicken broth
  • 1 cup frozen corn optional
  • 1 8 oz block cream cheese, softened
  • ½ cup sour cream
  • Salt and pepper to taste
  • Fresh cilantro lime wedges, and shredded cheese, for garnish

Instructions

  • In a large pot, heat olive oil over medium heat. Add the diced onion and sauté for 3–4 minutes, or until softened.
  • Stir in garlic, cumin, oregano, smoked paprika, and chili powder. Cook for 1–2 minutes until fragrant.
  • Add green chiles, white beans, shredded chicken, and chicken broth. Bring to a boil, then reduce heat and simmer for 20 minutes.
  • Stir in corn (if using), cream cheese, and sour cream. Cook until everything is fully melted and creamy.
  • Simmer an additional 5–10 minutes. Season with salt and pepper to taste.
  • Serve hot, garnished with fresh cilantro, shredded cheese, and lime wedges.
