2 tablespoons olive oil 1 medium onion diced 4 cloves garlic minced 1 teaspoon ground cumin 1 teaspoon dried oregano ½ teaspoon smoked paprika ½ teaspoon chili powder 1 4 oz can diced green chiles 2 cans 15 oz each white beans, drained and rinsed 3 cups shredded cooked chicken rotisserie chicken works great 4 cups chicken broth 1 cup frozen corn optional 1 8 oz block cream cheese, softened ½ cup sour cream Salt and pepper to taste Fresh cilantro lime wedges, and shredded cheese, for garnish
In a large pot, heat olive oil over medium heat. Add the diced onion and sauté for 3–4 minutes, or until softened.
Stir in garlic, cumin, oregano, smoked paprika, and chili powder. Cook for 1–2 minutes until fragrant.
Add green chiles, white beans, shredded chicken, and chicken broth. Bring to a boil, then reduce heat and simmer for 20 minutes.
Stir in corn (if using), cream cheese, and sour cream. Cook until everything is fully melted and creamy.
Simmer an additional 5–10 minutes. Season with salt and pepper to taste.
Serve hot, garnished with fresh cilantro, shredded cheese, and lime wedges.
