Zucchini Fries

Today, we're taking ordinary zucchinis and turning them into flavor bombs - Zucchini Fries, AB style. Ingredients

  • 2 large zucchini
  • 2 large eggs
  • 2 cup panko bread crumbs
  • 1/2 cup Parmesan cheese
  • 1 tsp salt
  • 1 tsp pepper
  • Cooking Oil for frying

Instructions

  • Grate the zucchini and place it in a clean kitchen towel. Squeeze out excess moisture from the zucchini.

  • In a bowl, combine the grated zucchini, eggs, panko bread crumbs, Parmesan cheese, salt, and pepper. Mix well until all ingredients are evenly combined.
  • Heat cooking oil in a pan over medium heat.
  • Take a portion of the zucchini mixture and form it into a small patty.
  • Carefully place the zucchini patty in the hot oil and fry until golden brown on both sides.
  • Remove the fritter from the pan and place it on a plate lined with paper towels to absorb any excess oil.

  • Repeat the process with the remaining zucchini mixture
  • Serve the Parmesan Zucchini Fritters warm with your favorite dipping sauce.
