- 2 large zucchini
- 2 large eggs
- 2 cup panko bread crumbs
- 1/2 cup Parmesan cheese
- 1 tsp salt
- 1 tsp pepper
- Cooking Oil for frying
Grate the zucchini and place it in a clean kitchen towel. Squeeze out excess moisture from the zucchini.
In a bowl, combine the grated zucchini, eggs, panko bread crumbs, Parmesan cheese, salt, and pepper. Mix well until all ingredients are evenly combined.
Heat cooking oil in a pan over medium heat.
Take a portion of the zucchini mixture and form it into a small patty.
Carefully place the zucchini patty in the hot oil and fry until golden brown on both sides.
Remove the fritter from the pan and place it on a plate lined with paper towels to absorb any excess oil.
Repeat the process with the remaining zucchini mixture
Serve the Parmesan Zucchini Fritters warm with your favorite dipping sauce.
