In a bowl, combine warm water and sugar. Sprinkle yeast over the water and let it sit for about 5 minutes until it becomes foamy.
In a large mixing bowl, combine flour and salt. Make a well in the center and add the yeast mixture and vegetable oil. Mix until a dough forms.
Transfer the dough to a floured surface and knead for about 5-7 minutes until it becomes smooth and elastic.
Place the dough in a greased bowl, cover it with a clean kitchen towel, and let it rise in a warm place for 1 hour or until it doubles in size.
Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
Bring 10 cups of water and baking soda to a boil in a large pot. Meanwhile, punch down the risen dough and divide it into small sections. Roll each section into a rope and cut into bite-sized pieces.
Drop the pretzel bites into the boiling water and baking soda mixture for about 20-30 seconds. Remove with a slotted spoon and place on the prepared baking sheet.
Sprinkle the pretzel bites with coarse salt while they are still wet from boiling.
Bake in the preheated oven for 12-15 minutes or until the pretzel bites are golden brown.
Allow the pretzel bites to cool for a few minutes before serving. Enjoy them warm, and dip into your favorite mustard, cheese sauce, or any preferred dip.
