  • 1 tbsp olive oil
  • 1 small leek
  • 1 clove garlic
  • 4-5 oz baby spinach
  • 8 large eggs
  • 1/2 cup half and half
  • 1/2 cup crumbled feta cheese
  • 2 tbsp freshly chopped dill
