Spinach Frittata Recipe


Alright, folks, we’re about to get down and dirty in the kitchen with a dish that’ll make your taste buds do the happy dance. Today, we’re cooking up a mean and green Spinach and Feta Frittata that’ll have you coming back for seconds, thirds, and maybe even fourths. So grab your apron and let’s get Smokin’ and Grillin’!

Ingredients

  • 1 tablespoon of olive oil
  • 1 small leek (or your favorite onion)
  • 1 clove of garlic
  • 4-5 ounces of baby spinach (fresh or frozen)
  • 8 large eggs
  • 1/2 cup of half and half (or your preferred dairy/nondairy delight)
  • 1/2 cup of crumbled feta cheese
  • 2 tablespoons of freshly chopped dill
  • Salt and pepper to taste

Instructions

Preheat the oven to a toasty 375°F (190°C) because things are about to heat up.

In my trusty cast-iron skillet, I heat up the olive oil. Toss in those leeks (or onions) and let them sizzle until they’re soft and ready to party.

Introduce the minced garlic to the mix. Let the aromatic magic unfold – garlic is the unsung hero in every recipe.

Time to throw in the spinach, whether it’s fresh and lively or frozen and determined. Let it mingle in the skillet until it’s all wilted and ready to join the flavor fiesta.

Crack those eggs into a bowl like a pro chef. Pour in the half and half (or my chosen dairy/nondairy potion), and whisk it up – I’m creating a symphony of flavors here. Pour this golden elixir over the veggie medley in the skillet.

Sprinkle that crumbled feta on top like it’s confetti at a culinary celebration. Because, well, it is a celebration.

Slide that skillet into the preheated oven and let it work its magic for about 20-25 minutes or until the eggs are set and the edges are golden brown.
