Bourbon Peach Cobbler

Ingredients

Filling:

  • 1 tbsp very soft unsalted butter
  • 2 lbs fresh peaches (about 5 large peaches, peeled, pitted, and sliced into 1/2 inch slices)
  • ⅔ cup light brown sugar, lightly packed
  • 3 tbsp corn starch or all-purpose flour
  • 2 tbsp good quality bourbon or cognac (optional)
  • ½ tsp vanilla extract (if omitting the bourbon, increase the vanilla to 2 teaspoons)
  • ¼ tsp ground ginger
  • ¼ tsp ground allspice
  • ⅛ tsp ground cardamom

Topping:

  • ¼ cup unsalted butter, melted
  • ⅓ cup light brown sugar, lightly packed
  • 1 large egg
  • ½ tsp vanilla extract
  • 1 cup all-purpose flour, fluffed, spooned, and leveled
  • ¾ tsp baking powder
  • ¼ tsp coarse Kosher salt (if using table salt, use half the amount)
  • 1 tbsp granulated sugar

For Serving:

  • Vanilla ice cream
  • ¼ tsp ground vanilla bean (optional)

Instructions

Preheat your oven to 375°F (190°C).

In a large mixing bowl, combine the sliced peaches with brown sugar, corn starch (or flour), bourbon (if using), vanilla extract, ground ginger, ground allspice, and ground cardamom. Toss the ingredients until the peaches are well coated.

Transfer the peach mixture into a greased baking dish, spreading it out evenly.

In another bowl, prepare the topping. Mix melted butter, brown sugar, egg, and vanilla extract until well combined. Add flour, baking powder, and salt. Stir until a dough forms.

Drop spoonfuls of the topping evenly over the peach mixture.

Sprinkle granulated sugar over the topping.

Bake in the preheated oven for about 40-45 minutes or until the topping is golden brown, and the peach filling is bubbly.
