Loaded Baked Potato Casserole

Welcome back! Today, we’re firing up the grill to create a dish that’s a true crowd-pleaser: Loaded Baked Potato Casserole. Get ready to dive into layers of creamy mashed potatoes, gooey cheese, crispy bacon, and fresh green onions – all cooked to perfection on your grill!

Ingredients

  • 6 large russet potatoes, peeled and diced
  • ¼ cup unsalted butter
  • 4 oz cream cheese, softened
  • ⅔ cup sour cream
  • ½ cup milk
  • ½ teaspoon garlic powder
  • Salt and pepper, to taste
  • 2 cups cheddar cheese, shredded
  • 1 ½ cup bacon, cooked and crumbled
  • ¼ cup green onions, diced

Instructions

Preheat the oven to 375°F (190°C).

Prepare Potatoes:

  • Peel and dice the russet potatoes into small cubes.
  • Boil the potatoes in a large pot until fork-tender. Drain and set aside.

Make the Potato Mixture:

  • In a large mixing bowl, combine the boiled potatoes, unsalted butter, cream cheese, sour cream, milk, garlic powder, salt, and pepper.
  • Mash the mixture until smooth and well combined.

Assemble the Loaded Baked Casserole:

  • Spread half of the mashed potato mixture into a greased baking dish.
  • Sprinkle half of the shredded cheddar cheese and half of the crumbled bacon over the potatoes.
  • Repeat the layers with the remaining mashed potatoes, cheddar cheese, and bacon.

Bake:

  • Bake in the preheated oven for about 25-30 minutes or until the cheese is melted and bubbly.

Finish and Serve:

  • Remove from the oven and sprinkle diced green onions on top.
  • Let it cool slightly before serving.
