Shrimp and Sausage Rice Skillet

Ingredients  

  • 1 1/3 cup uncooked Long Grain White Rice
  • 2 2/3 cup Chicken Broth
  • 1 lb Large or Jumbo Shrimp, peeled and de-veined
  • 4 tbsp Butter
  • 1 – 2 Garlic Cloves
  • 1 – 2 Bell Peppers (any color)
  • 1 – 2 Andouille Sausage
  • Green Onions
  • Salt and Pepper, to taste
  • The Level Up Series A Rub (or your preferred seasoning)

Instructions 

  • In a skillet, melt 2 tablespoons of butter over medium heat. Season the shrimp with The Level Up Series A Rub or your preferred seasoning. Add the seasoned shrimp to the melted butter, making sure each shrimp has full contact with the skillet surface. Cook for about 1.5 minutes on each side or until the shrimp turns opaque. Remove the shrimp and set aside.
  • Add the remaining 2 tablespoons of butter to the skillet.
    Slice the Andouille sausage into quarters and add it to the skillet. Allow it to cook for a few minutes until it starts to release its flavor. Add sliced bell peppers and diced garlic to the skillet. Stir and cook until the vegetables are slightly softened.
  • Add green onions for additional flavor. Stir to combine. Place the cooked shrimp back into the skillet and mix everything together.
  • Add uncooked rice to the skillet. Stir and let it toast for about 2 minutes. Pour in chicken broth to the skillet, ensuring all ingredients are well combined.
  • Bring the mixture to a boil, then reduce the heat to a simmer. Cover the skillet with a lid or aluminum foil and let it simmer for approximately 20 minutes. Check and stir occasionally to prevent sticking.
  • After 20 minutes, remove the lid and let the rice sit for a few minutes to dry out slightly. Serve the Shrimp and Sausage Rice Skillet in bowls, garnishing with additional green onions if desired.
