This recipe offers all the savory, cheesy goodness of traditional lasagna but swaps out beef for lean ground turkey. Not only does this make for a lighter meal, but it also opens up a whole new world of flavor possibilities. Buckle up as we dive into the world of Turkey Lasagna, exploring its history, variations, and everything you need to make it a success!

The History of Lasagna

Lasagna is more than just a dish; it’s a culinary tradition that traces its roots back to ancient Italy. The concept of layered pasta dishes dates back to the Roman Empire, where similar dishes were made with sheets of pasta, meat, and cheese. The modern lasagna we know and love, however, emerged during the Middle Ages in Italy. It was originally made with sheets of pasta, meat, and cheese, and evolved over time with the introduction of tomato sauce, which was brought to Italy from the Americas in the 16th century.

In Italy, lasagna is a staple at family gatherings and special occasions. It’s a dish that brings people together, much like our turkey lasagna recipe aims to do. By using ground turkey, we’re not only making a healthier version but also giving a nod to the evolution of lasagna itself.

Benefits of Using Ground Turkey Over Beef

Why swap ground beef for ground turkey? Let me break it down for you. Ground turkey is a leaner alternative to beef, which means it contains less fat and fewer calories while still packing a punch of protein. This makes it an excellent choice for those looking to enjoy a hearty meal without all the extra calories.

Ground turkey also has a milder flavor compared to beef, which means it readily takes on the flavors of the seasonings and sauces you use. This makes it incredibly versatile and a great base for creating a variety of lasagna flavors. Plus, using turkey helps in reducing the overall fat content of your meal, making it a better option for those watching their fat intake.

Ingredients

Here’s what you’ll need to whip up this delicious Turkey Lasagna:

  • 3 tablespoons Olive Oil
  • 1 Yellow Onion, diced
  • 2 cloves Garlic, minced
  • 1 ½ pounds Ground Turkey
  • One 14.5-ounce Can diced Tomatoes
  • Two 15-ounce Cans Tomato Sauce
  • 1 cup Water
  • 3 Bay Leaves
  • 1 ½ teaspoon Dried Basil
  • 2 teaspoons Granulated Sugar
  • 1 teaspoon Italian Seasoning
  • 2 teaspoons Salt or to taste
  • ½ pound Mozzarella Cheese, grated
  • ½ cup Grated Parmesan Cheese
  • 2 cups Whole Milk Ricotta Cheese
  • ½ teaspoon Dried Basil
  • ½ teaspoon Dried Parsley
  • Salt & Pepper to taste
  • 1 pound Lasagna Noodles
  • ¼ pound Mozzarella Cheese grated (for topping)

Step-by-Step Guide

1. Prepare the Meat Sauce

  1. Heat Olive Oil: In a large heavy-bottomed pot, heat 3 tablespoons of olive oil over medium heat. Olive oil adds a nice depth of flavor and helps cook the vegetables.
  2. Sauté Onion and Garlic: Add 1 diced yellow onion and sauté for 2-3 minutes until the onion becomes translucent. Then, add 2 minced garlic cloves. Garlic adds a rich aroma and flavor, so don’t skimp on it.
  3. Cook the Ground Turkey: Add 1 ½ pounds of ground turkey to the pot. Break the meat apart with a spoon or spatula as it cooks. Cook until the turkey is browned all over. Ensure you cook it thoroughly, as undercooked turkey can be unsafe.
  4. Add the Tomatoes and Seasonings: Once the turkey is browned, pour in one 14.5-ounce can of diced tomatoes and two 15-ounce cans of tomato sauce. Add 1 cup of water to thin out the sauce slightly. Toss in 3 bay leaves, 1 ½ teaspoons of dried basil, 2 teaspoons of granulated sugar (to balance the acidity of the tomatoes), 1 teaspoon of Italian seasoning, and 2 teaspoons of salt.
  5. Simmer the Sauce: Bring the sauce to a boil, then reduce the heat to a simmer. Allow the sauce to cook for 1-2 hours or until it thickens up. Stir occasionally to prevent scorching. If the sauce gets too thick, add a bit more water.Tip: If your sauce starts to stick or burn on the bottom, don’t panic. Just add a little water and scrape the bottom of the pot to release any stuck bits.

2. Prepare the Cheese Mixture

  1. Mix the Cheeses: In a bowl, combine 2 cups of whole milk ricotta cheese with ½ teaspoon dried basil, ½ teaspoon dried parsley, and salt & pepper to taste. The ricotta adds creaminess to the lasagna, and the herbs enhance the flavor.
  2. Set Aside: Set the cheese mixture aside while you prepare the noodles and assemble the lasagna.

3. Cook the Lasagna Noodles

  1. Boil Noodles: Cook 1 pound of lasagna noodles according to the package instructions, but cook them for 2/3 of the recommended time. This will ensure they don’t become too soft and mushy when baked. Typically, this takes about 7 minutes.
  2. Cool Noodles: Drain the noodles and place them in a large bowl of cold water to stop the cooking process. This also helps in handling the noodles later on.

4. Assemble the Lasagna

  1. Layer the Ingredients: Spread ½ cup of the prepared meat sauce on the bottom of a lightly greased 9×13-inch baking dish. Place 5-6 noodles over the sauce to cover the bottom completely.
  2. Add Cheese Mixture: Spread half of the cheese mixture over the noodles, then top with one-third of the remaining meat sauce.
  3. Repeat Layers: Add another layer of noodles, the second half of the cheese mixture, and another third of the meat sauce. Finish with a final layer of noodles and the last of the meat sauce.
  4. Top with Mozzarella: Sprinkle ¼ pound of grated mozzarella cheese over the top. This will give your lasagna a delicious, bubbly, and slightly crispy cheese topping.

5. Bake the Lasagna

  1. Preheat the Oven: Preheat your oven to 375°F (190°C).
  2. Cover and Bake: Cover the lasagna with greased foil to prevent the cheese from sticking to the foil. Bake for 45 minutes with the foil on.
  3. Finish Baking: Remove the foil and bake for an additional 15 minutes or until the cheese on top is browned and bubbly.
  4. Cool Before Serving: Remove the lasagna from the oven and cover it lightly with foil. Let it rest for 20-30 minutes before cutting and serving. This helps the layers set and makes serving easier.

Expert Tips and Tricks

Making the Perfect Sauce

  1. Use Fresh Herbs: Fresh herbs like basil and oregano can make a big difference in flavor. If you have fresh herbs on hand, use them in place of dried herbs. Add them towards the end of cooking to preserve their flavor.
  2. Balance the Acidity: Tomatoes can be quite acidic. A small amount of sugar helps balance this acidity. Taste your sauce and adjust the sugar if needed.
  3. Simmer Low and Slow: Allowing the sauce to simmer for a longer time develops richer flavors. If you have the time, let it cook for even longer.

Achieving the Perfect Cheese Mixture

  1. Use Whole Milk Ricotta: Whole milk ricotta cheese gives a richer and creamier texture compared to part-skim ricotta. It’s worth the extra fat for the added creaminess.
  2. Mix Thoroughly: Ensure that the herbs and seasoning are evenly mixed into the cheese. This will ensure every bite is flavorful.
  3. Layering: Don’t overdo it with the cheese mixture. It should be spread in a thin, even layer to prevent the lasagna from becoming too rich.

Variations

  1. Spinach and Artichoke Lasagna: Add 1 cup of chopped spinach and 1 cup of chopped artichoke hearts to the cheese mixture for a veggie-packed twist.
  2. Mushroom Lasagna: Sauté 2 cups of mushrooms and add them to the meat sauce. Mushrooms add a hearty texture and earthy flavor.
  3. Spicy Turkey Lasagna: Incorporate 1 teaspoon of red pepper flakes into the meat sauce for a spicy kick.
  4. Butternut Squash Lasagna: Replace some of the tomato sauce with pureed butternut squash for a sweet and savory flavor.
  5. Mexican Lasagna: Use taco seasoning in place of Italian seasoning and top with shredded cheddar cheese. Add layers of black beans and corn for a Tex-Mex twist.
  6. Pesto Lasagna: Layer in basil pesto along with the cheese mixture for an herby, vibrant flavor.
  7. Zucchini Lasagna: Thinly slice zucchini and layer it between the noodles for added texture and a veggie boost.
  8. Chicken Lasagna: Swap out the turkey for cooked, shredded chicken for a different protein option.
  9. Gluten-Free Lasagna: Use gluten-free lasagna noodles to make this dish suitable for those with gluten sensitivities.
  10. Alfredo Lasagna: Replace the tomato sauce with Alfredo sauce for a creamy, white lasagna.
  11. Greek Lasagna: Incorporate feta cheese and olives into the cheese mixture for a Mediterranean flair.
  12. Seafood Lasagna: Add cooked shrimp or crab to the cheese mixture for a luxurious seafood lasagna.
  13. Pumpkin Lasagna: Mix 1 cup of pumpkin puree into the cheese mixture for a seasonal twist.
  14. BBQ Turkey Lasagna: Add ½ cup of BBQ sauce to the meat sauce for a smoky flavor.
  15. Lentil Lasagna: Use cooked lentils in place of ground turkey for a vegetarian option that still provides plenty of protein.

  • 1/2 tsp Dried Basil
  • 1/2 tsp Dried Parsley
  • Salt & Pepper to taste

Remaining ingredients

  • 1 lb Lasagna Noodles
  • 1/4 lb Mozzarella Cheese grated for topping

Instructions

Make the Meat Sauce

  • In a large heavy-bottomed pot, heat olive oil over medium heat. Add in onion and saute for 2-3 minutes. Add in garlic and ground beef. Break meat apart as it browns. Once the meat has browned completely, pour in diced tomatoes, tomato sauce, water, bay leaves, dried basil, sugar, Italian Seasoning, and salt. Bring to a boil, then reduce the heat to simmer. Cook sauce for 1-2 hours or until very thick. You may have to add a little extra water as it reduces down to prevent scorching. This is normal.
  • While the meat sauce cooks, make the cheese layer: stir cheeses together in a bowl with basil, parsley, and salt & pepper. Set aside.
  • Cook lasagna noodles 2/3 of the time marked on the package. About 7 minutes or so. Drain and place noodles in a large bowl of cold water.

Layering the Lasagna

  • Spread 1/2 cup prepared sauce in the bottom of a lightly greased 9×13 baking dish. Layer in 5-6 noodles across the bottom to completely cover. Spread half of the cheese mixture over top of the noodles and then one-third of the sauce. Top with another layer of noodles, the second half of the cheese mixture, and another third of the sauce. The final layer is the last of the noodles and the last of the meat sauce. Sprinkle with 1/4 lb. grated mozzarella cheese. So real quick, here is the order of the layers:
    • Meat Sauce (just a little so the noodles don’t stick to the bottom)
    • Noodles
    • Cheese Filling
    • Meat Sauce
    • Noodles
    • Cheese Filling
    • Meat Sauce
    • Noodles
    • Meat Sauce
    • Mozzarella Cheese
  • To bake: preheat oven to 375 degrees. Cover lasagna with greased foil. Bake for 45 minutes with foil on. Remove foil and bake for another 15 minutes or until the cheese has browned and everything is hot all the way through. Remove from oven, cover lightly with foil and rest 20-30 minutes before cutting and serving. Sprinkle with dried parsley flakes, cut into squares and serve.
