Breakfast Sandwich with Sausage Gravy, Eggs, Tots

Ingredients

  • 24 tater tots
  • 8 oz ground Italian chicken sausage
  • 1 andouille sausage, sliced in half lengthwise (optional)
  • 1 tbsp all-purpose flour
  • 1 tsp kosher salt
  • ½ tsp coarse ground black pepper
  • ¾ cup whole milk
  • 4 oz cream cheese
  • 4 large eggs
  • 1 tbsp unsalted butter
  • 4 slices American cheese
  • 4 tbsp ketchup
  • 4 large hamburger buns

Step-by-Step Instructions

1. Air Fry the Tots

Preheat your air fryer to 400°F. Place tater tots in the basket in a single layer. Cook for 10–12 minutes, shaking the basket halfway through, until golden and crispy.

2. Sear the Andouille (Optional)

Slice the andouille in half lengthwise and toss it on a hot skillet. Sear until those cut sides are beautifully browned — about 2–3 minutes per side. Set it aside. You can slice it again to fit your sandwich if you want.

3. Make the Gravy

Use that same skillet (don’t wash out the flavor). Add the ground Italian chicken sausage and cook over medium-high heat. Break it down with a spatula and cook until browned and cooked through, about 4–5 minutes.

Once it’s cooked, drain most of the fat. Stir in the flour and let it cook for about 30 seconds to soak up those drippings.

Now pour in the milk, toss in the cream cheese, season with salt and pepper, and stir until it all melts down into a thick, creamy sausage gravy. Let it simmer 3–4 minutes. It should coat the back of a spoon when it’s ready.

4. Scramble the Eggs

In a clean skillet, melt the butter over medium heat. Crack the eggs into a bowl, whisk them up, and pour into the pan. Cook low and slow until soft and fluffy — just set. If desired, flip them for 15 seconds at the end for a little more structure.

5. Toast the Buns

Add a little butter to your skillet and toast the inside of the buns until golden brown. This extra step adds texture and deep flavor.


Assemble the Sandwiches

Layer your sandwich in this order:

  1. Bottom bun
  2. Optional: Seared andouille sausage
  3. Scrambled eggs
  4. Slice of American cheese
  5. Big scoop of creamy sausage gravy
