The Ultimate Breakfast Sandwich

Ingredients  

  • Uncured Canadian Bacon
  • Bacon
  • Frozen Shredded Potatoes or use fresh
  • Pancake Mix your favorite
  • Eggs
  • American Cheese slices
  • Syrup
  • Salt and Pepper To Taste

Instructions 

  • Preheat your cast iron skillet over medium heat.
  • Start by laying out your Uncured Canadian Bacon and save any bacon fat rendered during cooking.
  • Add regular bacon strips to the skillet, utilizing the bacon fat for cooking. Cook until crispy. Remove and set aside.
  • Create medium and low heat zones in the skillet for your frozen shredded potatoes.
  • Cook the potatoes until crispy, adding salt and pepper to taste. Set aside when done.
  • mix up your pancake batter. Incorporate an egg for richness.
  • Grease the skillet with a bit of butter or cooking spray.
  • Pour the pancake batter onto the skillet to create delicious, fluffy pancakes. Flip them and stack them.

  • Layer the sandwich in the cast iron skillet: Canadian Bacon, crispy hash browns with melted American cheese, and a spread of your choice. Top it off with another pancake to complete the sandwich.
  • Cook eggs over-easy in the skillet, using any remaining bacon fat. Add salt and pepper to taste.
  • Assemble the sandwich layers in the cast iron skillet: bottom pancake, Canadian Bacon, bacon strips, cheesy hash browns, over-easy eggs, and the top pancake.
  • Drizzle the entire sandwich with maple syrup for the perfect sweet and savory balance.
