- Uncured Canadian Bacon
- Bacon
- Frozen Shredded Potatoes or use fresh
- Pancake Mix your favorite
- Eggs
- American Cheese slices
- Syrup
- Salt and Pepper To Taste
Instructions
- Preheat your cast iron skillet over medium heat.
- Start by laying out your Uncured Canadian Bacon and save any bacon fat rendered during cooking.
- Add regular bacon strips to the skillet, utilizing the bacon fat for cooking. Cook until crispy. Remove and set aside.
- Create medium and low heat zones in the skillet for your frozen shredded potatoes.
- Cook the potatoes until crispy, adding salt and pepper to taste. Set aside when done.
- mix up your pancake batter. Incorporate an egg for richness.
- Grease the skillet with a bit of butter or cooking spray.
- Pour the pancake batter onto the skillet to create delicious, fluffy pancakes. Flip them and stack them.
- Layer the sandwich in the cast iron skillet: Canadian Bacon, crispy hash browns with melted American cheese, and a spread of your choice. Top it off with another pancake to complete the sandwich.
- Cook eggs over-easy in the skillet, using any remaining bacon fat. Add salt and pepper to taste.
- Assemble the sandwich layers in the cast iron skillet: bottom pancake, Canadian Bacon, bacon strips, cheesy hash browns, over-easy eggs, and the top pancake.
- Drizzle the entire sandwich with maple syrup for the perfect sweet and savory balance.
