Ingredients

For the Glaze:

  • ⅔ cup ketchup
  • ⅓ cup dark brown sugar, packed
  • 1½ tablespoons apple cider vinegar
  • ½ teaspoon Dijon mustard

For the Meatloaf:

  • 1 tablespoon olive oil
  • 1 medium yellow onion, minced
  • 3 cloves garlic, minced
  • 1¼ teaspoon salt
  • ¾ teaspoon freshly ground black pepper
  • 2 teaspoons paprika
  • 1 teaspoon dried thyme
  • 1½ tablespoons Worcestershire sauce
  • 1½ tablespoons Dijon mustard
  • 2 large eggs
  • 2 pounds ground turkey (93/7)
  • ¾ cup Italian seasoned breadcrumbs
  • A few springs chopped fresh parsley, for garnish (optional)

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C).

Prepare the Glaze:

  • In a small saucepan, combine ketchup, dark brown sugar, apple cider vinegar, and Dijon mustard.
  • Cook over medium heat, stirring occasionally, until the sugar has dissolved and the mixture has slightly thickened, about 5 minutes. Set aside.

Prepare the Meatloaf Mixture:

  • Heat olive oil in a skillet over medium heat. Add minced onion and garlic, and sauté until softened and fragrant, about 5 minutes. Remove from heat and let cool slightly.
  • In a large mixing bowl, combine the cooked onion and garlic mixture with salt, black pepper, paprika, dried thyme, Worcestershire sauce, Dijon mustard, and eggs. Mix until well combined.
  • Add the ground turkey and Italian seasoned breadcrumbs to the bowl, and gently mix until all ingredients are evenly incorporated.

Shape the Meatloaf:

  • Transfer the turkey mixture to a greased or parchment-lined loaf pan, shaping it into a loaf shape.

Glaze and Bake:

  • Spoon a portion of the prepared glaze over the top of the meatloaf, spreading it evenly.
  • Place the loaf pan in the preheated oven and bake for about 45-55 minutes, or until the meatloaf is cooked through and the internal temperature reaches 165°F (74°C).
  • During the last 10-15 minutes of baking, you can apply an additional layer of the glaze on top of the meatloaf for extra flavor.

Serve:

  • Once cooked, remove the meatloaf from the oven and let it rest for a few minutes before slicing.
  • Garnish with chopped fresh parsley, if desired, before serving.
