Whether you’re cooking for a busy family or just need something simple that delivers on flavor, this dish is reliable, satisfying, and incredibly easy to prepare.
Why You’ll Love This Recipe
There’s nothing better than tossing everything into the crockpot and letting it work its magic. This dish combines tender chicken breast, creamy soup, savory broth, and vegetables to create a one-pot meal that’s filling and flavorful. Best of all, it’s kid-friendly, budget-friendly, and perfect for leftovers.
What Makes It Stand Out
The addition of Level Up A Rub gives this simple dish a bold upgrade. With layers of savory spice, this seasoning brings depth to both the chicken and the rice without overpowering the dish. It’s a game changer when it comes to quick comfort food.
Ingredients
Here’s everything you’ll need to serve 4 people:
- 1 lb chicken breast
- 1 cup long-grain white rice
- 1 can (10.5 oz) cream of chicken soup
- 2 cups chicken broth
- 1 cup frozen mixed vegetables
- 2 pinches salt
- 1 teaspoon black pepper
- 1 tablespoon Level Up A Rub
Tip: If you’re feeding a larger group, this recipe can easily be doubled to serve 8.
Step-by-Step Instructions
Step 1: Add the Chicken
Place the chicken breast at the bottom of your crockpot.

Step 2: Mix the Base
In a medium mixing bowl, combine the rice, cream of chicken soup, chicken broth, frozen vegetables, salt, pepper, and Level Up A Rub. Stir well to evenly distribute everything.

Step 3: Combine and Cook
Pour the mixture over the chicken in the crockpot, spreading it out to cover the meat.

Step 4: Slow Cook
Cover the crockpot and cook on low for 4 to 6 hours. The chicken should be cooked through, and the rice should be tender and fluffy.

Step 5: Finish and Serve
Once done, fluff the rice with a fork. Slice or shred the chicken and serve hot. It’s that easy.

Tips for Best Results
- Rice Texture: Long-grain white rice works best here. Avoid using instant or parboiled rice, which can become mushy in a slow cooker.
- Chicken Options: You can also use boneless, skinless chicken thighs for a richer flavor.
- Check Early: Depending on your crockpot model, check at the 4-hour mark to prevent overcooked rice.
- Layer Flavors: Don’t skip the Level Up A Rub—it’s what takes this dish from basic to bold.
Variations
- Cheesy Chicken and Rice: Stir in 1 cup of shredded cheddar at the end for extra comfort.
- Tex-Mex Style: Add a can of diced tomatoes with green chilies and a dash of cumin.
- Creamier Version: Swap one cup of broth with an additional can of cream of chicken or cream of mushroom soup.
- Veggie Boost: Toss in fresh spinach, chopped zucchini, or diced mushrooms in the last hour of cooking.
What to Serve With It
This meal is hearty on its own, but you can pair it with:
- Garlic bread or dinner rolls
- A fresh green salad
- Roasted green beans
- Steamed broccoli
- Coleslaw
- Pickled veggies
- A drizzle of hot sauce or ranch
- Sliced avocado or fresh tomato wedges
- Cornbread or biscuits
Storage Tips
- Refrigerator: Store leftovers in an airtight container for up to 4 days.
- Freezer: Freeze in portion-sized containers for up to 3 months. Thaw overnight in the fridge before reheating.
- Reheat: Warm in the microwave or in a covered skillet over medium-low heat with a splash of broth or water.
Can You Prep This Ahead?
Yes. You can mix the rice, broth, soup, seasonings, and vegetables ahead of time and refrigerate for up to 24 hours. When you’re ready to cook, just place the chicken in the crockpot, pour the mix on top, and start the slow cooker.
Perfect for Families
This version makes 4 generous servings, perfect for a small family. If you’re cooking for more, simply double all the ingredients and follow the same method for a meal that serves 8. It’s an excellent recipe for gatherings, meal prep, or even taking to someone who needs a comforting, homemade dinner.
